Fabrice Collot. A French native, Collot was appointed General Manager of Banyan Tree Seychelles in August 2017. With over 27 years of experience, Collot amassed a wealth of expertise in government administration and in the hospitality industry in senior management roles across four continents. Collot joined the Banyan Tree Group in 2007, served at Banyan Tree Macau, Banyan Tree Al Areen Spa and Resort in Bahrain and Angsana Riads Collection in Marrakech, Morocco.

DESTINATION DINING EXPERIENCES – New farm to table offerings
A brand new immersive outdoor dining experience. Opened in 2018, Moutya, is bringing to life the culture, customs and cuisine of the Seychelles. Moutya is a form of Seychellois dance which takes place around a campfire and starts slowly to the beat of a single drum, before getting faster as the tempo increases. Hidden next to the conservation centre, yet steps from the resort, Moutya demonstrates how to cultivate food and allows guests to participate with live cooking stations. The local Creole experience begins with a sundown ritual at the beach, before journeying to the Moutya entrance and receiving permission to enter with a flower garland and welcome drink and joining a dance procession to the gazebo. Guests have the opportunity to enjoy a unique farm to table experience and sample the best local dishes including eggplant fritters, coconut fish curry and banana flambé with coconut rum – using resort grown vegetables, herbs and fruits. The launch of Moutya supports Banyan Tree’s ethos to embrace local culture and traditions whilst supporting local communities and the environment.

In honour of this, Banyan Tree Seychelles has introduced a new destination dining experience, 33 1/3 – named after Harrison’s solo album written whilst he embarked on a new Hindu way of living, at the Wetlands Area.
