Fabien Piacentino and his wife took over the management of Le Couvent des Minimes in 2013 after having worked in the hotel trade for more than 20 years (French Alps, Saint Martin in the Caribbean and for the Disney group in Paris).

History & Story
Nestled on the hillside near the idyllic village of Mane and drenched in Provencal sunshine, this covent was home to nuns before it was converted into an upscale hotel. Protected from the Mistral wind by the statuesque Volx Rock, the building, which dates back to 1613, is a blend of medieval architecture and contemporary design. You will be delighted by the period facades, 100 year-old terraced gardens, and the station of the cross overlooking the environs. style, as does Le Couvent des Minimes Hôtel & Spa, a temple to wellness and a promise of renewed well-being.
In 2015, major renovations have been done : both restaurants, the Spa, the lobby, as well as 7 rooms in a designed and contemporary style.

The Spa branded by L’Occitane wich features 750 sq meters of wellness with brand-new treatment rooms. A private air balloon L’Occitane to discover the Provence from the sky.
As the starting point for any excursion, the town of Mane is home to three remarkable buildings: its church, the Salagon priory, dating from the 12th to the 17th centuries, and the Sauvan château, the “Petit Trianon of Provence”, whose restored gardens are a lasting invitation to the land of scents. L’Occitane Museum, the olive tree Eco-museum at Volx, the Museum of Aromas and Perfume, or the experimental garden of aromatic plants.

The Chef Jérôme Roy, originating from the Tours area, learnt the tricks of the trade from some of the greatest chefs in France, such as Thierry Marx at Cordeillan Bages and Michel Troisgros in Roanne. In 2007, Jérôme Roy joined Pierre Gagnaire at the Les Airelles restaurant in Courchevel.
He masterfully combines perfumes and flavours, while upholding a perfect respect of the local produce, adeptly preserving its authenticity.
